Yesterday I searched on the internet for a new soup recipe. There are tons of versions of Minestrone. I gathered the ingredients from each one that I liked and came up with this recipe. It was really good!
1 lb Italian sausage
1 red bell pepper
2 stalks of celery
1/2 a bag of shredded carrots
1 32 oz container of beef broth (you may use vegetable broth also)
2 cans diced tomatoes with basil and oregano
bow tie pasta
Brown your sausage, chop your veggies, combine all ingredients in a large pot on the stove. I let it simmer covered for an hour then add the pasta. Season with salt, pepper and I added a tsp of sugar and some extra Italian seasonings. Top with Parmesan cheese in your bowl and serve with crackers or French bread.
